If you want a flavorful experience that’s bursting with various seasonings, textures, and spices, then bibimbap is a dish you need to try. Traditionally, bibimbap is the Korean version of a leftover meal where you combine various things in your fridge to make a quick and cheap meal. This is a go-to dish that I make for family and friends. It’s guaranteed to make everyone speechless while eating it and wishing there were seconds.
Note: This dish might seem scary with how prep-heavy it is, but don’t let that deter you. An Asian or International market will have the ingredients for this delightful dish.
Ingredients
Bibim Gochujang Sauce
- 5 tbsp gochujang
- 2 ½ tbsp mirin
- 3 tbsp rice vinegar
- 1 tbsp honey
- 2 tsp soy sauce
- 2 cloves of garlic, grated
- 2 tsp ginger, grated
- 2 tsp toasted sesame oil
Steak Marinade
- 2 lb rib eye or top sirloin, thinly sliced
- 6 tbsp soy sauce
- 3 tbsp brown sugar
- 2 tbsp mirin
- 1 Asian or Korean pear (Cannot substitute with a western pear, because the Asian pear has an enzyme in it that helps tenderize the meat)
- ½ an onion
- 1 tbsp garlic, minced
- 1 tsp ginger, minced
- 1/8 tsp ground black pepper
Fresh Carrot Kimchi
- 2 lbs carrots
- Salt to taste
- 1 tbsp gochugaru
- 3 cloves garlic, grated
- 1 tbsp ginger, grated
- ¼ c green onion, thinly sliced
- 1 tbsp fish sauce
- Spicy Cucumbers
- 1 seedless English cucumber
- Salt for curing
- 2 tbsp spicy chili crisp (Like Lao Gan Ma’s)
- Lemon juice to taste
Bean Sprouts
- 2 c bean sprouts
- 1 tbsp fish sauce
- 3 tbsp oil
- 3 cloves of garlic, thinly sliced
- Salt to taste
Miscellaneous Ingredients
- Lettuce leaves, thinly sliced into shreds
- 4 eggs
- 2-3 tbsp of oil to cook with
- Sesame seeds to garnish
- 4-6 c of cooked short-grain rice
Directions
Bibim Gochujang Sauce
Combine all ingredients in a bowl and mix to combine. Can be made ahead of time.
Bulgogi
- Combine all marinade ingredients excluding the beef in a food processor and blend until smooth. Pour marinade over beef in a bowl or a Ziplock bag and mix until combined. Let marinate in fridge for at least 2 hours (overnight is ideal for the best flavor).
- When ready to cook: Preheat a skillet at med high heat. To be even more authentic, heat up your grill. Cook or grill meat until desired doneness and set aside.
- Fresh Carrot Kimchi
In a medium bowl, add grated ginger, fish sauce, and gochugaru. Mix until combined. - Peel and julienne cut the carrots (cut into matchstick sizes). Mix carrots with paste and set aside. (Can be made ahead of time.)
Spicy Cucumbers
- Slice cucumber into quarters, season generously with salt, and toss together in a bowl. Let cure at room temperature for 15 minutes.
- Drain and rinse the excess salt off lightly with water. Add spicy chili crisp and lemon juice to taste, and toss together to coat.
Bean Sprouts
- Fill a medium pot with water and bring to a boil. Add the bean sprouts in batches and boil for 30 seconds. Take bean sprouts out and immediately submerge in ice water until chilled. Remove and drain on a paper towel.
- In a separate small pot, heat oil and sliced garlic over medium heat, stirring constantly. Once the garlic is starting to turn golden in color, take off heat, add the bean sprouts, and toss to coat. Add fish sauce and stir to combine
Assembly
Divide rice among 4 bowls. Add the carrot kimchi, spicy cucumbers, bean sprouts, and lettuce around the edge of the bowl. Cook 4 eggs sunny side up or to your preference. Top bowls with bulgogi and add a fried egg to each bowl. Garnish with sesame seeds and bibim gochujang sauce. Mix everything together and enjoy.
Tips
This can all be made in about 2 ½ hours’ time, if desired. Start with the bulgogi marinade first. Then begin the cucumber curing afterwards. While the cucumbers are curing, make the carrot kimchi and then move on to the bean sprouts.
How to cook perfect sunny side up eggs with a delicious runny yolk: when the bottom of the egg whites become solid, use a spoon to baste the top of the egg whites with the oil until the whites are solid.
